After work yesterday, I spontaneously ordered a couple of pit beef sandwiches and a side of fries from a small business in the next town via the delivery service, DoorDash. Pit beef is a local specialty in the Baltimore, Maryland area. It is roast beef cooked on a grill. The meat is then thinly sliced and served on a Kaiser roll, sometimes a potato flour one, sometimes not. The beef has a distinct smoky flavor. I prefer them plain, but you can add a number of different sauces, condiments, and onions. There is even something called tiger sauce!

I grew up eating them in the summertime, anticipating a sandwich while visiting the beach, ballpark, or carnival. Saturday evening would have been the second night of my hometown’s carnival, but it was canceled this year. I would definitely at least picked up one pit beef sandwich there! It was nice to celebrate the summer by eating a couple of them. This is my favorite sandwich, not something Italian!
I savored my first sandwich and “Hand-Cut Ocean Fries” for dinner yesterday evening. They were delicious! I ordered regular-size sandwiches and there was so much meat! It was nice to relax and do something special following a particularly long workday, and workweek.

I ate the second sandwich with a couple slices of a tomato seasoned with freshly ground Himalayan pink salt and black pepper for lunch today. Sometimes in July, red tomato will replace one of the servings of greens that I strive to consume every day. I also paired this meal with a bottle of Harp Lager. I only occasionally drink beer, but I usually purchase a six pack sometime during the summer.

If you have never heard of pit beef, then I recommend that you visit Maryland, USA and try it! You can also try pit ham and pit turkey. You can find these regional dishes in restaurants specializing on barbecue year-round.
